I've felt a little down this week, busy and rushed even though this is the week.that.will.never.end.
So I decided to make some comfort food. I picked up How to Cook Everything: The Basics and paged through and found something that struck my fancy.
Oh, man. Fruit crisp. Perfect.
Makes 6 to 8 servings, prep/cook time up to 1 hour (but, oh god it's worth it). If you're using a watery fruit, like berries, toss them with 1 T of cornstarch before baking. If you use tart fruit, increase the sugar.
6 cups peeled, cored and sliced apples or other fruit (I used peaches, because they were on sale and I hate to peel)
1 t. ground cinnamon
Juice of 1/2 lemon
2/3 c. brown sugar, to taste
5 T cold, unsalted butter, cut into bits, plus butter for greasing pan
1/2 c. rolled oats
1/2 c. all-purpose flour
(The published recipe calls for optional 1/4 c. unsweetened coconut, 1/4 c. chopped nuts, but why ruin a simple, good dish? Silly chefs!)
dash salt
Preheat oven to 400*. Toss the fruit with half the cinnamon, the lemon juice, and 1 T of the sugar. Spread it in a lightly buttered 8-inch square or 9-inch round baking pan.
Combine all other ingredients - including remaining cinnamon and sugar - in the container of a food processor and pulse a few times, then process a few seconds more until everything is well-incorporated but not uniform. Or, use a pastry cutter to incorporate ingredients (which I would have done, except I couldn't find my pastry cutter, dang it).
Spread the topping over fruit and bake 30 to 40 minutes, until the topping is browned and fruit is tender. Serve hot, warm, or at room temperature.
I also bought fixin's for potato salad + homemade mayonnaise. Heaven.
