Dinner tonight consisted of leftover kopanisti from Yanni's (my mouth was on fire for half an hour) and my yummy mushroom and spinach lasagna. I rule the kitchen!
Mushroon and Spinach (White) Lasagna
Serves 6
9 uncooked lasagna or ready-to-use lasagna noodles
1 15-oz. container ricotta cheese
2 eggs
1 c. chopped fresh mushrooms of your choice
1 large onion, chopped (about 1 cup)
1 10-oz package of frozen chopped spinach, thawed and squeezed/spun to drain
1/2 t. salt
1/4 t. nutmeg
1 14-oz jar Alfredo sauce
3 T. parmesan cheese
Heat oven to 350*. Grease rectangular 13x9x2 baking dish. Cook and drain noodles if using uncooked.
Mix 3/4 cup of ricotta cheese, 1 egg, mushrooms and onion.
Mix 1 cup ricotta cheese, 1 egg, the spinach, salt, and nutmeg. Spread 1/2 cup of the alfredo sauce in baking dish. Top with three noodles; spread with mushroom mixture. Top with three noodles; spread with spinach mixture. Top with three noodles and remaining alfredo sauce.
Cover loosely with aluminium foil and bake 50 minutes. Sprinkle with parmesan cheese. Bake uncovered for 10 minutes or until hot at the center. Let stand 10 minutes before serving.
I miss tomato sauce sometimes, though. :(
So, I don't eat much fast food anymore. The occasional grilled chicken sandwich and chili from Wendys, but I've given it up.
For whatever reason, I WANTED a Quarter Pounder with Cheese today. I was like a crack addict falling off the wagon - I knew it was a bad idea, but I knew my mind wouldn't rest until I had one.
I made a mental deal with myself - I'd get one, but I would only eat until it tasted bad. Unlimited sniffing until I took the first bite (I think it's the smell that I like).
Three bites. Fifteen minutes before I ended up in the bathroom at Target (is it just me or does Target have the nastiest bathrooms anywhere?). Yarrrgh.
I can eat a lot of things, but non-food products just don't do it anymore.
I am buying the first season of Lost, finally. Just to find it under $40...
