Blueberry Coffee Cake
Oct. 1st, 2006 11:52 pmI made this tonight for a work potluck. It's a vegan recipe from Vegan With A Vengance by Isa Chandra Moskowitz.
Blueberry Coffee Cake (serves 12-16)
Topping:
1/4 c. all-purpose flour
3 T. brown sugar
1/4 t. cinnamon
1 T. canola oil
1 c. chopped walnuts
Cake:
4 c. all-purpose flour
1 T. baking powder (tip: to find out if your baking powder is still active, place a teaspoon of it into a cup of water. If it foams, it's still usable.)
1 t. baking soda
1 1/2 t. salt
1 1/2 t. cinnamon
1/4 t. allspice
1/4 c. canola oil
1 (6 oz.) container vanilla soy yogurt
1 c. maple syrup
1 1/2 c. plain soymilk
1 t. vanilla extract
2 c. fresh blueberries
Preheat oven to 350*. Lightly grease or spray 9x13 in baking pan with non-stick cooking spray.
Topping:
Sift together the flour, brown sugar and cinnamon. Drizzle in the oil a little at a time and mix with your fingers until crumbs form. Add walnuts and mix.
Cake:
Sift together dry ingredients in large bowl. In separate bowl vigorously whisk wet ingredients until well combined. Add wet ingredients to dry ingredients and mix well. Fold in blueberries.
Spread batter in prepared pan and sprinkle topping over it. Bake for 45 minutes or until a piece of uncooked dry spaghetti comes out clean.
